Oatmeal Cookie
Sugar-free, Dairy-free
Ingredients
- 1/3 C chunky almond butter
- 2 ripe bananas
- 1 tsp vanilla
- 2 Tbsp soy milk
- 2 Tbsp maple syrup
- 1/2 tsp baking powder
- 2 1/2 C rolled oats
- 1 egg
- dash cinnamon
- dash cloves
- 1/4 C flour
- 1/2 C raisons
Directions
- In a large bowl, mash bananas with fork until smooth.
- Add almond butter, soy milk, vanilla and maple syrup and mix well. Add remaining ingredients, except raisons, and stir until well combined.
- Mix in raisons.
- Drop spoonful of dough onto ungreased cookie sheet.
- Bake at 350 degrees for 13-15 minutes, or until done.

I use a similar recipe (that I got out of the Sac Bee), but it uses just bananas or applesauce, almond meal, oil, and raisins or chocolate chips. No added sweetener at all, just the fruit sweetening it.
